Chronic Cooking with Craig Ex: Recipe #8 – Banana Bread

Banana Bread. Quite possibly the best baked good there is. Everyone’s Mom, Aunt or Grandma always made ‘the best’ banana bread growing up; I mean, who doesn’t have fond memories of the loved loaf. But your boy makes a mean one too. You might need to be ‘peeled’ off the couch after… just sayin’.

Lightly grease an 8 and 1/2” bread pan, and preheat your oven to 350F.

In a large bowl, combine a ½ cup of canna butter and 1 cup of brown sugar, and beat until light and fluffy.

Then add 3 well mashed ripe bananas and 2 well beaten eggs, and beat until well mixed.

In a separate bowl, combine 1 and ½ cups of flour, 1 teaspoon of baking soda, a ½ teaspoon of salt, and ½ a teaspoon of cinnamon.

Fold in with banana mixture, but do not over mix.

Pour into pan and bake 55 to 65 minutes – checking doneness with a tooth pick.

Cool before removing from pan.

Slice, serve and smile.

Ingredients:

1/2 cup canna butter
1 cup brown sugar
3 well mashed ripe bananas
2 eggs, well beaten
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp.  salt
1/2 tsp. cinnamon

Directions:

Preheat oven to 350F (180C). Cream butter and sugar until light and fluffy. Add bananas and eggs and beat until well mixed. Mix dry ingredients and blend with banana mixture, but do not over mix. Pour into a lightly greased bread pan tin. Bake 55 and cool on a wire rack before removing from pan.
